By making big batches of Multi Grain Pancake Mix and storing it in the pantry, pancakes can be made quickly and easily with the pancake mix already done beforehand.

Homemade Multi Grain Pancake Mix recipe

The pancake mix is a healthy, whole grain pancake mix that includes oats and flaxseed, making it high in protein and fiber!

Although these are simple Buttermilk Pancakes, there are lots of additions you can add to these pancakes. Basically, 2-3 tablespoons of any of these ingredients can be added.

Pancake Additions

  • chopped nuts
  • berries
  • chopped apples or pears
  • raisins or dried cranberries
  • grated coconut
  • chocolate chips
  • culinary lavender
  • spices like nutmeg, ginger or cardamom (1 teaspoon)

These pancakes are soft and fluffy – healthy and delicious!

Multi Grain Buttermilk Pancakes

Instructions

  • In a large bowl, whisk together the egg, buttermilk, milk and vanilla extract.
  • Add pancake mix and mix until just combined.
  • Heat a skillet and spray with non stick spray or brush lightly with oil or butter.
  • Use about 1/3 cup batter for each pancake and cook on medium heat until golden brown on both sides. Place on paper towel lined plate to absorb any excess grease.
  • Serve with syrup and fresh fruit.
  • Garnish with powdered sugar, if desired.

    I am yet to get my head around Pancakes for Breakfast, but my little one loves pancakes for breakfast. I have already bookmarked ur Multi grain flour mix and these would be tried very shortly !
