Watermelon Salsa
Watermelon Salsa is a fabulous salsa – fruity and spicy. Great on its own with tortilla chips or to garnish your tacos with, especially Fish Tacos.
Add it to your Cinco de Mayo celebration along with these other Mexican Recipes.
Watermelon is one of my favorite foods. It so clean and refreshing and so versatile as it can be used in both sweet and savory recipes.
Although it is wonderful to just enjoy slices of fresh watermelon or refreshing Watermelon Juice, there are so many more things you can create with watermelon.
Include it in fruit punch or sweet recipes likes these Watermelon Cupcakes or Come y Bebe Fruit Salad. However prior to trying this Rajasthani Watermelon Curry, I never considered it in savory preparations. I then learned it is a very adaptable fruit and works just as well with spicy and more savory flavors like this Summer Fruit Gazpacho.

This is a very light and refreshing salsa and is the perfect kid friendly dish. Just adapt the amount of jalapeno according to your child’s preference.
During watermelon season, it is so wonderful to see the variety of watermelons. This salsa is great to utilize either red flesh or golden watermelons. For color variety, if you are using the golden watermelons, then use a green bell pepper instead of a yellow one.
Storing Leftovers
Watermelon is one fruit that does not keep for long. The liquid seeps out and as the watermelon stays in its own liquid, the fruit starts to deteriorate.
With this salsa, if you have leftovers that you pack away in the fridge, you need to take care so the watermelon does not turn rancid.
Every morning, drain the salsa so that the salsa will remain as dry as possible.
If you do this, this salsa should keep well in the refrigerator for up to 3 days.

Both vegan and gluten free, this healthy salsa is also great for snack time with your favorite tortilla chips.

Watermelon Salsa
Ingredients
- 4 cups chopped watermelon
- 1 bell pepper chopped
- 1 jalapeno finely chopped
- 4 scallions finely chopped
- 2 tablespoons cilantro finely chopped
- 3 tablespoons lime juice
- 2 tablespoons olive oil
- 1 teaspoon salt
- tortilla chips for serving
Instructions
- Combine all ingredients except tortillas and mix to combine. Leave for 10 minutes for flavors to develop.
- Serve with tortilla chips.
