Tropical Shrimp Salad

A protein packed Paleo salad

It’s amazing how every city in the country has huge bulk membership only shopping superstores like Costco, BJ’s & Sam’s Club. These did not exist when I was a child.

Anyway, Costco is the nearest to where I live and I shop there regularly. As a way to promote their products, periodically they come out with free cookbooks.

This Tropical Shrimp Salad I adapted with minor changes from the one titled Easy Cooking: The Costco Way. If you are a seafood lover who loves tropical flavors, you will LOVE this salad. Protein packed with both shrimp and beans, this is a filling salad that will work great to get that bathing suit figure back in shape for the summer.

So on your next trip to Costco or your local favorite market, be sure to pick up a can of black beans, some tropical fruit, shrimp and a few additional flavors….this healthy salad will be a welcome addition to your weekly meal repertoire. Although I used cantaloupe in this version, you can use any kind of melon you prefer – honeydew, canary melon, etc.

Tropical Shrimp Salad

Ingredients

  • 2 lbs. shrimp peeled and cleaned, cooked
  • 2 cups chopped pineapple
  • 3 cups chopped cantaloupe
  • 1 chopped orange bell pepper
  • ½ red onion minced
  • 2 teaspoons grated ginger
  • ¼ cup mint leaves
  • 1 finely chopped jalapeno
  • 2 tablespoons lime juice
  • ½ 15 oz. can black beans drained and rinsed
  • lettuce leaves for serving

Instructions

  • In a large bowl, combine pineapple, cantaloupe, bell pepper, onion, ginger, mint, jalapeno and lime juice. Mix well. Marinate in the refrigerator for at least 2 hours.
  • When ready to serve, add black beans and shrimp. Toss to combine.
  • Serve on a bed of lettuce.
