shrimp
peeled and cleaned, cooked

cups
chopped pineapple
3
cups
chopped cantaloupe
1
chopped orange bell pepper
½
red onion
minced
2
teaspoons
grated ginger
¼
cup
mint leaves
1
finely chopped jalapeno
2
tablespoons
lime juice

can black beans
drained and rinsed
lettuce leaves
for serving
Instructions
In a large bowl, combine pineapple, cantaloupe, bell pepper, onion, ginger, mint, jalapeno and lime juice. Mix well. Marinate in the refrigerator for at least 2 hours.
When ready to serve, add black beans and shrimp. Toss to combine.
Serve on a bed of lettuce.
