It can be made with any kind of beans you have on hand, whether they are canned beans or cooked dried beans. Although it is delicious any time of year, this White Bean Stew is especially warm and comforting during fall and winter months.

This is a mild flavored stew, meant to be a bit generic without bold flavors, so that the whole family will love this easy stew. This family friendly recipe is a great make ahead recipe. If you meal plan, this makes a great freezer meal, that can be stored in the freezer, then defrosted and reheated for later use.

However, if you prefer bolder flavors here are some ideas!

  • Make it spicy! – Add Brazilian Malagueta peppers, harissa paste, red pepper flakes or your favorite hot sauce.
  • Make it smoky! – Use smoked paprika instead of sweet paprika and add 1 teaspoon of ground cumin.
  • Make it healthier! – Add leafy greens like kale leaves, mustard greens, collard greens or spinach.

This wholesome stew is also easily adaptable to a Vegetarian diet. All you need to do is omit the chorizo. With the beans, it is a protein packed stew so you do not need to replace the chorizo with anything else however if you would like to, you can add some mushrooms or even fried/roasted tofu.

What type of white bean should I use? 

Any kind of white bean can be used like navy beans, cannellini beans, northern beans or any white beans you have access to.

Can I make it with fresh tomatoes instead?

Yes, you can puree fresh tomatoes to equal 3 cups, then simmer it down until it is thickened and reduced to 2 cups. You can substitute this for the crushed tomatoes.
You can also use 6 tablespoons of tomato paste with 2 cups water and mix to substitute the crushed tomatoes.

How can I adapt this recipe to make it into a Vegan White Bean Stew?

All you need to do is omit the chorizo.

If I am using dried beans, how should I cook the beans?

Dried beans should be pre soaked overnight. Then just boil them with a bay leaf and a few cloves garlic until they are fork tender. Drain the beans, discard the bay leaf and then add them to the stew when the recipe calls for it. Alternately, you can cook the beans even faster using an Instant Pot.

Serve with crusty bread and a green salad for a complete meal. Add some Brazilian malagueta peppers if you want to add more heat and spice. I love the briny spicy taste of malagueta peppers, however you can use anything like harissa paste or similar chili pastes to spice up this stew, as you desire.

  • Chill completely for up to 2 hours at room temperature or if more time is needed, chill in the refrigerator.
  • Once completely chilled, store in an airtight container

  • 2 tablespoons olive oil
  • 1 chopped onion
  • 3 finely chopped garlic cloves
  • 9 oz. smoked chorizo
  • 2 cups cooked beans (or 1 15.5 oz. can of beans
  • 2 cups crushed tomatoes
  • 2 cups water
  • 2 teaspoons paprika
  • 1 teaspoon dried oregano
  • 1/2 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 3 tablespoons fresh parsley finely chopped


  • In a large pot or Dutch Oven, heat oil.
  • Add onion and garlic. Saute until it starts to change color.
  • Add chorizo and saute for 5 minutes until golden brown.
  • Add beans, tomatoes and 2 1/2 cups water.
  • Add paprika, oregano, sugar, salt and pepper. Stir to combine. Bring to a boil.
  • Reduce to a simmer on medium heat and cook for about 15 minutes, until thickened.
  • Add parsley and stir to combine.


  • Instead of plain water, you can use chicken stock or vegetable stock for additional flavor.
  • Any kind of white beans can be used like navy beans, great northern beans or cannellini beans.
  • This bean stew can be customized the way you like it. Make a thicker stew by simmering it for a longer period of time or if you prefer a thinner brothier stew, cook it for less time. Please note that it will thicken as it cools, so you want to simmer it until it is a bit thinner than you like it. Even just 5 minutes after you turn off the heat, it will thicken quite a bit.
