Add onion and garlic. Saute until it starts to change color.
Add chorizo and saute for 5 minutes until golden brown.
Add beans, tomatoes and 2 1/2 cups water.
Add paprika, oregano, sugar, salt and pepper. Stir to combine. Bring to a boil.
Reduce to a simmer on medium heat and cook for about 15 minutes, until thickened.
Add parsley and stir to combine.
Notes
Instead of plain water, you can use chicken stock or vegetable stock for additional flavor.
Any kind of white beans can be used like navy beans, great northern beans or cannellini beans.
This bean stew can be customized the way you like it. Make a thicker stew by simmering it for a longer period of time or if you prefer a thinner brothier stew, cook it for less time. Please note that it will thicken as it cools, so you want to simmer it until it is a bit thinner than you like it. Even just 5 minutes after you turn off the heat, it will thicken quite a bit.
