Slow Roasted Tomatoes, Overnight Roasted TomatoesThis is one of the easiest ways of roasting tomatoes that occurs while you are sleeping. It uses residual heat of the oven to slow roast the tomatoes, so the natural sugars come out. These tomatoes will be sweet, smoky and juicy.

These can then be added to everything from salads to pastas and as a pizza topping. They can even be served as a side dish by itself to compliment any meal.

Overnight Herb Roasted Tomatoes

Prep Time: 15 minutes
Cook Time: overnight
Yield: Serves 4

Ingredients:

  • 9 cherry tomatoes (or Campari tomatoes), halved
  • 2 tablespoons olive oil
  • a few sprigs of oregano
  • 1 sprig of rosemary
  • 1 crushed garlic clove
  • 1/4 teaspoon salt
  • a pinch of sugar

Preheat oven to 450 F.

Place tomatoes face down in a baking dish. Add all other ingredients.

Turn off the oven. Place baking dish in oven and leave overnight.
