This is a classic Italian dish or to be more accurate Italian American dish that is commonly served in restaurants and street festivals. Here in NY we have two annual Italian festivals, the San Gennaro festival in Manhattan’s Little Italy and Ferragosto in the Bronx’s Little Italy. Regardless of which festival you attend, you will definitely be able to lay your hands on a plate of Sausage & Peppers.
Although Sausage & Peppers are often served as is or just with some crusty Italian bread, it can also be made into a complete meal by combining it with a plate of pasta.
Sausage & Peppers
Serves 4
Prep Time: 10 minutes
Cook Time: 20Â minutes
Ingredients:
- 1/4 cup oil
- 1 thinly sliced onion
- 1 sliced red bell pepper
- 1 sliced green bell pepper
- 3 finely chopped garlic cloves
- 14 oz. fresh Italian sausages (I used chicken sausage), cut into large pieces
- 1/2 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/4 teaspoon crushed red pepper
- salt, to taste
Heat oil. Add onions and peppers. After 2 minutes, add the garlic. Saute until the vegetables start to caramelize, about 5 minutes.
Add sausage, oregano, basil and red pepper. Saute on heat until the sausages are browned, about 5 minutes. Add 1/2 cup water and simmer on medium heat for 10 minutes.
Serve with pasta.
Notes: If using smoked sausage, you can skip the step of adding water and cooking an additional 10 minutes.
