Italian Sausage & Peppers

Ingredients

  • 1/4 cup oil
  • 1 thinly sliced onion
  • 1 sliced red bell pepper
  • 1 sliced green bell pepper
  • 3 finely chopped garlic cloves
  • 14 oz. fresh Italian sausages I used chicken sausage
  • 1/2 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/4 teaspoon crushed red pepper
  • salt to taste

Instructions

  • Heat oil. Add onions and peppers. After 2 minutes, add the garlic. Saute until the vegetables start to caramelize, about 5 minutes.
  • Add sausage, oregano, basil and red pepper. Saute on heat until the sausages are browned, about 5 minutes. Add 1/2 cup water and simmer on medium heat for 10 minutes.
  • Serve with pasta.

Notes

If using smoked sausage, you can skip the step of adding water and cooking an additional 10 minutes.
