The last day I think my bag weighed about 20 pounds, with jars of jam, bottles of hot sauce and marinades, tea, chocolate, black rice and so much more. One of the products I came home with was a spicy Spanish chorizo, which I used in this Spain inspired stew.
Chorizo Mung Bean Stew
Prep Time: 5 minutes
Cook Time: 1 hour
Yield: Serves 4
Ingredients:
- 2 tablespoons oil
- 1 chopped onion
- 2 finely chopped garlic cloves
- 1/3 cup finely chopped chorizo
- 1 cup yellow mung beans (moong dal)
- 1 teaspoon smoked paprika
- salt, to taste.
In a deep skillet, heat oil. Add onions and garlic. Saute until they start to change color. Add chorizo and saute for 1 minute.
Add mung beans and 3 cups water. Add paprika. Stir to combine and bring to a boil. Reduce to a simmer and cook for 45 minutes – 1 hour, until beans are tender.
Add salt and stir to combine. Cook for 1 more minute.

This is really such a delightful stew Mir!..I guess being a demonstration chef at a Food Show is awesome..
