Mung Bean Stew, Chorizo Mung Bean Stew, Spanish Recipes, Side Dish Recipes, side dishesA few weeks ago I had the opportunity to work as a demonstration chef at the Fancy Food Show. The best part of the show was getting an opportunity on my breaks to visit the other booths. Food manufacturers and distributors from all over the world gathered in 3 sections of the Jacob Javits Center. Unfortunately, I only had the chance to visit two sections. However, I was still able to discover lots of new food products which I will be introducing to you. Everything from black hot sauce to espresso speculoos. The last day is the best. All of the booths always have food for samples at the show. At the end, many of them don’t want to spend the money to ship all the stuff back, especially if they have come from far away countries. The cost of shipping it back would be more than the cost of the lost product.

The last day I think my bag weighed about 20 pounds, with jars of jam, bottles of hot sauce and marinades, tea, chocolate, black rice and so much more. One of the products I came home with was a spicy Spanish chorizo, which I used in this Spain inspired stew.

Chorizo Mung Bean Stew

Prep Time: 5 minutes
Cook Time: 1 hour
Yield: Serves 4

Ingredients:

  • 2 tablespoons oil
  • 1 chopped onion
  • 2 finely chopped garlic cloves
  • 1/3 cup finely chopped chorizo
  • 1 cup yellow mung beans (moong dal)
  • 1 teaspoon smoked paprika
  • salt, to taste.

In a deep skillet, heat oil. Add onions and garlic. Saute until they start to change color. Add chorizo and saute for 1 minute.

Add mung beans and 3 cups water. Add paprika. Stir to combine and bring to a boil. Reduce to a simmer and cook for 45 minutes – 1 hour, until beans are tender.
