One of the best things about blogging is virtually meeting bloggers from across the country and even the world. Today I am presenting a guest post from one of my new blogger friends, Jessie. We are both participating in Blog Swap Meet with the theme of Valentine’s Day Recipes. Without further ado, take a look at her delicious recipe.
Chocolate Peanut Butter Pudding
Hi, my name is Jessie and I blog over at The Dinner Pages! My
blog generally features recipes I’ve garnered from cooking through my extensive
cookbook collection with a focus on family friendly and often healthy and quick
dinners. I’m very happy to be participating in this blog swap meet today. Thank
you to Chef Mireille for hosting my post on her blog.
The theme for today’s swap is “Valentine’s Day
Recipes.” Ah, Valentine’s Day. For many this holiday conjures up thoughts
of pink hearts and naked cupids. Maybe red roses and those addictive candy
hearts. It makes me think of famous couples too: Romeo and Juliet, Napoleon and
Josephine, Rhett and Scarlett O’Hara, Mickey and Minnie. You know what another
one of my favorite pairings is? Chocolate and peanut butter. In my opinion you
can’t go wrong with this combination since the slightly salty savory nature of
peanut butter pairs just perfectly with smooth sweet chocolate.
This Chocolate Peanut Butter Pudding is the perfect end to a
romantic dinner with your love. It’s so quick and easy to make that you can
focus your attention on other tasks…like spending quality time together. It’s
rich and decadent but also simple enough if you want a special treat any time.
It’s like a peanut butter cup in pudding form. If you love peanut butter, you
really can’t go wrong with this salute to this well loved coupling of peanut
butter and chocolate. Share this delicious dessert with someone you love. Happy

Chocolate Peanut Butter Pudding 
Yield: serves 4
  • 1/3 cup granulated sugar
  • 2 tablespoons cornstarch
  • 2 tablespoons unsweetened cocoa powder
  • 1 1/2 cups skim milk
  • 1/2 cup light cream
  • 1/3 cup milk chocolate chips (or 2 ounces milk chocolate,
    chopped)
  • 1/4 cup creamy peanut butter
  • 1 tablespoon chopped unsalted dry-roasted peanuts, for garnish

Directions:
1. In a medium saucepan, combine the sugar, cornstarch, and
cocoa powder. Whisk in the milk and cream and bring to a boil over medium-high
heat, stirring constantly for 1 minute or until thick and bubbly.

2. Remove from heat and stir in the chocolate and peanut butter
until smooth. Spoon into serving bowls and garnish with chopped peanuts. Can
make ahead.
