Strawberry Brownies

These brownies with intense chocolate flavor offer a surprise of fresh fruit every few bites and complemented with a flavored whipped cream, make a wonderful treat.

Strawberry Brownies

Serves 20
Ingredients:
10 oz. unsweetened baking chocolate or good quality dark chocolate at least 85% cacao
2 sticks butter
2 cups all purpose flour
3 eggs
1/4 teaspoon salt
1 teaspoon vanilla extract
1/4 cup strawberry puree (about 5 large strawberries)
3/4 cup strawberries, chopped
2 teaspoons baking powder
1 1/2 cups sugar ( I used Sugar in the Raw {coarse granulated brown sugar} but you can use regular white sugar)

Preheat oven to 350 F.  Grease and flour a 9×13 brownie pan.
On a low flame, combine butter and chocolate and heat until chocolate is melted.  Add strawberry puree and mix well.

In a bowl, combine flour, baking soda and salt.
In a large bowl, beat eggs, vanilla and sugar until smooth and creamy.  Add flour, a little at a time, and mix well.  At this point, the batter will be the consistency of cookie dough.
Add melted chocolate and mix well.
Fold in almonds and strawberries.
Spread batter in an even layer in the prepared pan.

Bake for 30 minutes.  Remove from oven and let rest for 5 minutes.
Flip over onto a board or large plate and knock the back with a wooden spoon to release.  Remove pan and  let brownie cool.  Flip over so the top is on top and slice.

Serve with Strawberry Whipped Cream below.

Strawberry Whipped Cream

1 cup heavy cream
1/4 teaspoon ground cloves
2 tablespoons strawberry puree
2 tablespoons powdered sugar
a drop of red food coloring (optional)

Using an electric mixer, beat cream for 2 minutes on high speed.  Add cloves, strawberry puree, sugar and food coloring, if using (I didn’t use).  Beat for a few more minutes, until whipped cream consistency.
