Frittata, Frittata Muffins, Mini FrittataWhen most of us think of muffins, we thiink sweet fruit or grain muffins, but there are many other things that can be baked in a muffin tin and molded to the muffin shape. These savory delicacies in small muffin shapes make them a great option to serve for parties.

Frittata is basically an Italian omelette. Made thinner than American omelettes and generally always include some kind of vegetable, most often mushroom or onions, and cheese. Here is my twist on the Italian classic, spiced up with some spicy Spanish chorizo. If you don’t have any spicy chorizo, you can add spice by adding a little pepper jack cheese and/or crushed red pepper.

Serve these for your next brunch party!

By leaving the bell pepper raw when added in the mix, it still maintains some of its crunch giving this textural variety leading to its umami. A spicy yet delicate mouthful of goodness.
