When most of us think of muffins, we thiink sweet fruit or grain muffins, but there are many other things that can be baked in a muffin tin and molded to the muffin shape. These savory delicacies in small muffin shapes make them a great option to serve for parties.
Frittata is basically an Italian omelette. Made thinner than American omelettes and generally always include some kind of vegetable, most often mushroom or onions, and cheese. Here is my twist on the Italian classic, spiced up with some spicy Spanish chorizo. If you don’t have any spicy chorizo, you can add spice by adding a little pepper jack cheese and/or crushed red pepper.
Serve these for your next brunch party!
Spicy Chorizo Party Frittatas
Prep Time: 10 minutes
Cook Time: 15 minutes
Yield: 20 mini muffins
Ingredients
- 8 eggs
- 1/4 cup heavy cream
- 1/4 cup lowfat milk
- 1/2 teaspoon black pepper
- 1/4 teaspoon salt
- 1/3 cup freshly grated Parmesan cheese
- 1/4 cup diced smoked chorizo
- 1 teaspoon finely chopped fresh oregano
- 1 orange bell pepper, diced
Preheat oven to 375 F. Spray a muffin tin or silicone muffin molds with non stick spray.
In a large bowl, combine eggs, milk, salt and pepper. Whisk well.  Add cheese, chorizo, oregano and bell pepper and mix well.
Fill muffin cups 3/4 full with egg mix.
Bake for 15 minutes until puffy and set.
Notes:
You can use all whole milk to replace the cream and lowfat milk, if you prefer.
Fluffy soft eggs spiced up make these so delicious. Enjoy it as part of your breakfast with toast and fresh sliced tomatoes.
By leaving the bell pepper raw when added in the mix, it still maintains some of its crunch giving this textural variety leading to its umami. A spicy yet delicate mouthful of goodness.
