Prickly Pear Caribbean Smoothie

This Caribbean style smoothie, also known as a batida, is not so smooth. I used grated coconut to add a little texture to it.

I really make an effort to introduce ingredients to you from around the world. Maybe you’ve seen a cactus pear in the supermarket and not sure how to eat it or what it tastes like. The best I can explain the flavor is something like a combination of strawberry and papaya. Like a pomegranate, it has edible seeds. However, the seeds are quite firm and bothersome to some people so that’s why I think a batida is a fabulous way to utilize this exotic fruit. The use of the blender breaks down the seeds.

Prickly Pear Caribbean Smoothie

Serves 2
Ingredients:

  • 4 prickly pears (aka cactus pear)
  • 12 oz. can evaporated milk
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon nutmeg, freshly grated
  • 4 ice cubes
  • 1/4 cup frozen grated coconut
Combine all ingredients in a blender and process until smooth.
