Pistacchio Nut Creme

A great filling for dates or a great dip for fresh apricot and peaches, the key ingredient is pistacchio nut creme.
Pistacchio nut creme is similar to marzipan. It is made the same way – the only difference is that it is made with pistacchios, instead of almonds. You should be able to find it at Middle Eastern markets and any markets that specialize in international products.
It is available at Sahadis on Atlantic Avenue in Brooklyn, New York – the Middle Eastern enclave of New York.
To make this dip, Add 2 tablespoons of Lebneh to the nut creme. Lebneh is a middle eastern cheese very similar to sour cream. This is also available in Middle Eastern supermarkets like Sahadi’s. Using a food processor, mix these ingredients with 1 tablespoon of rosewater or orange blossom water.
If you want to use it as a stuffing, you should chill it first, but if you plan on using it as a dip, you can serve immediately with fresh fruit.

I guarantee your guests will be loving you, after serving this. I served it at a dinner party recently and the guests were talking of nothing else but the pistacchio nut creme at the end of the meal. This impressed them more than anything else in the 3 courses served.

It can also be used as filling for layered cakes, or even as cake frosting itself. It is versatile and your creativity can create a host of items with this secret ingredient.
