Blondies are brownies made without chocolate. While I love chocolate, I am not one of those who want chocolate in every dessert. Especially at this time when desserts are everywhere with holiday parties, I always look for the rare fruit based desserts or just plain sugar cookies. When you are planning the dessert options for your holiday party, make sure you include at least one non chocolate dessert for people like me. With or without the lavender, its a delicious addition to your holiday table.
Continuing with my lavender tea party theme I am sporadically including within my Bake-a-thon posts, here is another lavender infused dessert. I also made this a healthful fiber rich version by using all whole grains. Einkorn flour has an easily digestible form of gluten which you can read more about here, so this is also a low gluten brownie. While those who are allergic to gluten still shouldn’t eat them, for those who simply have an intolerance and often complain about bloating after eating gluten, this is a fabulous treat.
Lavender Peach Blondies
Prep Time: 20 minutes
Cook Time: 25 minutes
Yield: Serves 15
Instructions:
- 1 1/2 cups firmly packed brown sugar
- 1/2 cup softened butter
- 2 teaspoons vanilla extract
- 2 eggs
- 1 cup Einkorn flour
- 1/2 cup oat flour
- 1 teaspoon baking powder
- 1/2 teaspoon freshly grated nutmeg
- 1/4 teaspoon salt
- 1/2 teaspoon culinary lavender
- 1/2 cup chopped dried peaches
- 1/4 cup chopped roasted walnuts
Preheat oven to 350 F. Line bottom of 12×9 brownie pan with parchment paper. Spray with non stick spray.
Beat sugar and butter until soft and creamy.
Add vanilla extract and mix to combine. Add eggs, mixing well after each addition.
In a medium bowl, combine flours, baking powder, nutmeg, salt and lavender.
Add half of the dry ingredients and mix well until thoroughly incorporated. Add the rest of the dry ingredients and mix until thoroughly incorporated.
Using a rubber spatula, fold in the peaches and walnuts.
Transfer to prepared pan and spread batter in an even layer.
Bake for 25-30 minutes, until set.
Cool for 20 minutes in pan. Flip over onto plate or wooden board. Carefully peel parchment paper off of bottom. Cool completely before slicing.
With the dried fruit, it tastes likes the season.
