Harissa Roast Chicken

Harissa Roast Chicken is a super simple recipe with just 4 ingredients. Whether you use the recipes for freshly made harissa and raz el hanout or decide to buy them, regardless this is an easy and delicious recipe!

This is a low on effort but high on flavor recipe that won’t keep you in the kitchen for long, but will satisfy your family’s taste buds. I had just made a new batch of harissa. I had run out of harissa many weeks ago and had been missing this spoonful of goodness in my meals and made this chicken as I wanted to use the harissa immediately.

Although you can easily purchase a jar of harissa in any good quality supermarket like Fairway or Whole Foods, I can promise you that once you make your own you will never want to buy another jar again. I have been making my own for 1 1/2 years and won’t be going to store bought ever again. This has now made me a harissa critic. A few weeks ago when I went to Hummus & Pita Co. and had the harissa with my meal, I found it bland with not enough salt and other spices. Before making my own, I would never have been so critical. This is why I rarely order in restaurants food I make myself.

Fast & Easy Dinner

Only four ingredients and salt takes less than 5 minutes of active work with the oven doing the rest – who can complain on this. Although I suggest serving it with Freekeh Date Pilaf, you can just as easily serve it with rice and veggies. If you steam the vegetables and cook the rice in a rice cooker, again you will spend maybe 15 minutes of active cooking time for a complete meal.

With all the flavor in this chicken, no one is going to believe you spent so little time in the kitchen.

Serve with Freekeh Date Pilaf or Saffron Couscous & Vegetable Saute for a complete meal.

For those who like their food extra spicy, you can serve some more harissa on the side.

Harissa Roast Chicken is a quick and easy recipe with just 4 ingredients!

Ingredients

  • 5 chicken drumsticks
  • 1 cup plain yogurt
  • 1 tablespoon harissa
  • 1 tablespoon raz el hanout
  • 1 teaspoon salt

Instructions

  • Combine all ingredients and mix to coat the chicken in the marinade well. Leave to marinate for at least 1/2 hour, but overnight is best for optimal flavor.
  • Preheat oven to 375 F. Spray a baking tray with non stick spray.
  • Remove chicken pieces from marinade and place in baking tray.
  • Place in oven and bake for 40 minutes. Flip chicken pieces over and cook for another 15 minutes.
