Baked Sweet Potato Oatmeal
A quick and easy baked breakfast that is perfect for leftover holiday guests. Spices and sweet potato transform boring oatmeal into something fantastic!
Yes it’s another recipe with sweet potato – but this one is much healthier than yesterday’s Sweet Potato Cheesecake Pie.
This breakfast is perfect to serve the day after Christmas, if you have sleepover guests.
Everyone always has some extra sweet potato lying about, after they’ve made their desserts like this Sweet Potato Cheesecake Pie and candied yams or any other variety of sweet potato dishes that make their way on to holiday tables.
With just 1/2 cup of mashed sweet potatoes and other basic ingredients that you will most likely have about, this breakfast comes together quite easily.
With all the fiber in the oatmeal, you will fuel them up for their long drives or commutes back to their respective homes. Oats are such a healthy way to start the day and also a great addition to sweet treats. Check out some of my other oat based goodies you might like to try out!
If you are gluten free, make sure you use certified gluten free oats.

This is such a delicious use of those leftover sweet potatoes!
This oatmeal is soft and moist on the inside.
Garnish with fresh fruit like berries or apples to add some freshness!
Such a warming breakfast for cold winter mornings!
Baked Sweet Potato Oatmeal
Ingredients
- 3 cups oats
- ½ teaspoon salt
- 1 teaspoon ground cinnamon
- ½ teaspoon ground ginger
- 1 ½ teaspoons baking powder
- ¾ cup firmly packed brown sugar
- ½ cup cooked mashed sweet potato
- 1 egg
- 4 tablespoons melted butter
- 2 teaspoons vanilla extract
- 2 cups milk
- ½ cup raisins
Instructions
- Preheat oven to 350 F. Spray a square baking dish with non stick spray.
- In a large bowl, combine oats, salt, cinnamon, ginger, baking powder and brown sugar. Stir to combine.
- In another bowl, combine sweet potato, egg, butter, vanilla and milk. Whisk together until thoroughly combined.
- Add raisins and mix to combine.
- Transfer to baking dish.
- Transfer to oven and bake for 40 minutes.

oh candied yams is very popular here especially for holidays like Thanksgiving and to a lesser degree on Christmas – they are very sweet though!
