There are so many different versions of fried rice from Hong Kong to Penang to Bangkok to Jakarta…here’s a version I came up with using whatever I found in the fridge.
I had bits of odds and ends of leftover vegetables to use up before I went on vacation. What’s the easiest recipe to use up the bits and bobs of veggies -fried rice! Although this isn’t the traditional Nasi Goreng recipe, I went to the Indonesian side of my family with the flavor profile in this version of fried rice. I also had some leftover char sui (Chinese BBQ pork). That’s the best thing about fried rice – you can put all sorts of leftovers into it and it just improves the flavor.
