Nachos for Breakfast? Not your first thought right? But why not indulge…it’s holiday season after all! Is your kid having a slumber party? What kid wouldn’t love to dig into a bowl of Nachos for breakfast. Topped with nutritious breakfast foods like eggs and potatoes, it’s really not that bad at all…except for some of the deep frying.
There really isn’t a recipe per se, as you can just put as little or as much as each of the ingredients as you desire.

Breakfast Nachos
Prep Time: 5 minutes
Cook Time: 30 minutes
Ingredients:
- eggs
- potatoes
- turkey bacon (you can use regular bacon if you prefer, but this version is less fat)
- diced tomatoes
- grated Monteray Jack cheese
- salt and pepper, to taste
- tortilla chips
Preheat oven to 400 F.
Cook eggs as scrambled and season with salt and pepper.
Peel and dice potatoes. Deep fry until golden brown.
Fry turkey bacon until browned and crispy.
Layer chips with all of the ingredients.
Add cheese on top and place in oven until cheese melts, about 10 minutes. Top with tomatoes.
Serve.
