This month computer problems barred my participation in the monthly Food of the World event I usually participate in. Well, this has been in my drafts folder for over a year and I finally found the time to bake them up. These cookies are a little on the dry side, but go perfect with a cup of milk or tea. Is it tea time yet? Not quiite…well perfect so you have enough time to bake them up!
These simple sugar cookies are a specialty from the city of Moron. I made them a little healthier by replacing some of the flour with whole wheat. Moron is a municipality located in central Cuba, near the tourist resorts of Cayo Guillermo and Cayo Coco. Now that tourism from the US to Cuba is opening up, maybe you can visit Moron and compare how my recipe compares to the torticas you try there.
Prep Time: 20 minutes
Cook Time: 20-25 minutes
Yield: 25-30 cookies
Ingredients:
- 1 cup vegetable shortening (room temperature)
- 1 cup sugar
- 2 cups all purpose flour
- 1 cup whole wheat flour
- 1 1/2 teaspoon grated lime zest
- juice of 1 lime
Preheat oven to 350 F. Place parchment paper on top of cookie sheet and spray with non stick spray.
Mix shortening and sugar and mix until thoroughly combined. Add zest and flour and mix until thoroughly combined. The dough will be very dry. Add the lime juice and using the heat from your hands, mix until the dough comes together.
Transfer to a work surface and with a rolling pin, press into a disk about 3/4″ thick. As you roll, the dough will crack. When this happens, just press it together with your fingertips. Continue to do this until you have a smooth surface.
Using round cookie/biscuit cutters, cut out round shapes and transfer to prepared cookie sheet. Repeat until all the dough has been used.
Bake for 20-25 minutes, until golden. Leave to cool for 10 minutes before removing from cookie sheet.

Torticas de Moron – Cuban Sugar Cookies
