Plantain Spinach Smoothie, #sodelicious, #dairyfree, #veganPlantains are a staple of the Caribbean diet and in recent years the American audience has become aware of this delicious vegetable. Perhaps you have been to a Cuban or a Puerto Rican restaurant and had tostones, the green variety of plantain double fried and served with garlic sauce. However, plantains have many more uses than the deep fried treats. As versatile as pumpkin or sweet potato, it can be used in both savory and sweet preparations. I often make cake or sweet breads with the ripe ones.

Higher in Vitamin A, B6 and potassium than a banana, it will give you energy to get going if you start your day with this delicious smoothie. Added fiber and protein from peanut butter, chia seed and flax, it will keep you until lunchtime… Or do you need a pick me up before that tennis game? The potassium will keep you going for 5 sets!

Coconuts are as natural to the Caribbean as plantains, so when I read about the So Delicious contest, utilizing their #dairyfree coconut products, this combination immediately came to my mind. So Delicious makes many dairy free coconut milk based products from milk and yogurt to ice cream bars. Using  their unsweetened coconut milk, this #Vegan smoothie is great, even for the lactose intolerant!

 

Plantain Spinach Smoothie

Yield:  Serves 2

Ingredients:

  • 1 very ripe plantain
  • 1 cup baby spinach leaves
  • 2 pitted peaches
  • 1 1/2 cups unsweetened So Delicious coconut milk
  • 2 tablespoons coconut peanut butter (you an use regular peanut butter or almond butter)
  • 1 teaspoon chia seed
  • 1 tablespoon flax seed
  • 1 tablespoon agave nectar (optional)

Boil plantain for 15 minutes.

Peel plantain and combine with all other ingredients in the blender and mix well.

Serve immediately.

Notes:

You can boil the plantain the day before and put it in the refrigerator overnight. In the morning, just throw everything in the blender for a quick breakfast.

If you’d like a more homogenous color and texture, you can strain the smoothie or do it in a juicer instead of a blender.

With flax, chia and peanut butter, extra protein and fiber is added to this smoothie. It makes the perfect snack!
