Ginger Soy Chicken Wings with Indonesian Spice Mix

Indonesian Ginger Soy Chicken Wings are oven baked chicken that is so full of flavor with a freshly made spice blend. Perfect addition to your super bowl party!

Suriname has a very large Indonesian population. Indonesian cuisine really permeates the diverse cuisines of Suriname. These Indonesian style Chicken Wings were inspired from this side of my family.

Much of my family is from Suriname, one of the most diverse countries in the world. We have large communities of Indian, Indonesian, Chinese, African and what we call AmerIndian descended people. Coming from such a diverse country, inter marriage between different races is common. Within two generations of my family, I have cousins of every cultural denomination from Chinese and Jewish to Indonesian and Indian. I come from an extremely large extended family with my great grandfather having 12 children and my grandfather had 25. There are a lot of us in a very small country, so we had to marry into different cultures, whether we wanted to or not 🙂

With that being said, Indonesian food is as familiar to me as is Caribbean food. I think that is perhaps what sparked my interest in the cuisines of the world. From a very young age, I was introduced to so many different cultures and foods, depending which part of the family we were visiting.

I hate when people ask me what my favorite cuisine is. I truly don’t have one. It just depends what mood I’m in. I can totally appreciate a delicious plate of Indian food eating roti and dal with my hands as much as I can love a gourmet French meal with complete table service.

This is why my pantry is so large to accommodate so many cuisines. You don’t want to know how many closets I have full of kitchen supplies, in addition to the kitchen. Anyway, I went to the Indonesian side of my family to develop this recipe. It is one of my go to recipes for parties. With the chicken baked in the oven and a sauce that comes together so quickly, it is perfect for any kind of party or gathering!

These Ginger Soy Chicken Wings were created, inspired by the flavors of the Indonesian side of my family.

The freshly made spice blend is so versatile. You can use it to flavor roasted vegetables, fried rice and so much more.

The Ingredients

The shrimp powder will be the most difficult ingredient to source. Although it is available on Amazon, you will get better prices if you first try your local Asian market for the ingredients.

However, I have also included a recipe below for a homemade shrimp powder recipe.

Ginger Soy Chicken Wings with Indonesian Spice Mix

Ingredients

Spice Mix Ingredients

Chicken Ingredients

  • 2 lbs. chicken wings
  • 1 tablespoon Indonesian Spice Blend
  • 2 tablespoons oil
  • salt and pepper to taste

Sauce Ingredients

  • 1 tablespoon oil
  • 2 tablespoons grated ginger
  • ½ cup Kecap Manis sweet soy sauce
  • 2 tablespoons water
  • 1 tablespoon candlenut butter can substitute peanut butter
  • chopped cilantro for garnish

Instructions

  • To make the spice blend, combine all ingredients and toss well. You will need 1 tablespoon for the chicken. Save the rest for use with any type of meat or vegetable dishes.
  • Sprinkle chicken with 1 tablespoon of the spice blend, salt and pepper. Add oil and toss well.
  • Marinate for at least 1 hour.
  • Preheat oven to 400 F. Spray a cookie sheet with non stick spray.
  • Roast for 20 minutes.
  • Flip wings and cook for another 20 minutes.
  • To make the sauce,
  • In a saucepan, heat oil.
  • Add ginger and saute until softened.
  • Add Kecap Manis, candlenut butter and ¼ cup water.
  • Simmer for 5 minutes.
  • To serve, pour some of the sauce over chicken and serve extra sauce on the side.
  • Garnish with the cilantro.

Notes

To make the candlenut butter, place about 7-8 candlenuts in a spice grinder or mini food processor until you have a peanut butter consistency.
Any specialty products can be found at your local Asian market.
If you like your chicken a little darker, you can put chicken in the broiler for a few minutes after baking.
