To make the spice blend, combine all ingredients and toss well. You will need 1 tablespoon for the chicken. Save the rest for use with any type of meat or vegetable dishes.
Sprinkle chicken with 1 tablespoon of the spice blend, salt and pepper. Add oil and toss well.
Marinate for at least 1 hour.
Preheat oven to 400 F. Spray a cookie sheet with non stick spray.
Roast for 20 minutes.
Flip wings and cook for another 20 minutes.
To make the sauce,
In a saucepan, heat oil.
Add ginger and saute until softened.
Add Kecap Manis, candlenut butter and ¼ cup water.
Simmer for 5 minutes.
To serve, pour some of the sauce over chicken and serve extra sauce on the side.
Garnish with the cilantro.
Notes
To make the candlenut butter, place about 7-8 candlenuts in a spice grinder or mini food processor until you have a peanut butter consistency.
Any specialty products can be found at your local Asian market.If you like your chicken a little darker, you can put chicken in the broiler for a few minutes after baking.
