This past summer I worked at the annual Summer Fancy Food Show as a demonstration chef. As a freelance chef, every job is appreciated however, this was a really a secondary reason for my attendance. My main reason for attending was to look for some great brands that I would be honored to represent here on the Schizo Chef’s blog. Any break I had from my demonstration chef duties, I was on the prowl visiting the different booths and sampling everything to discover what new products would WOW me.
One of the booths was the El Yucateco hot sauce brand. I was already familiar with this hot sauce company as many Mexican restaurants here in NY use their brand of hot sauce on the table. The green and red habanero hot sauce bottles are on every table. Their hot sauce is also available at my local supermarket. However, I was unaware of the broad range of hot sauce varieties El Yucateco produces, including the Black Label version. I immediately fell in love with the Black Label El Yucateco hot sauce. It was hot, sweet and smoky but without the acidity that I despise in many hot sauce brands. This has become my new #1 favorite hot sauce.
As a result, I am so excited to announce my new partnership with El Yucateco. As brand ambassador for El Yucateco, I’ll be developing some recipes using their tastebud tantalizing hot sauces, one of which is in this post today. Additionally, they have agreed to sponsor a #giveaway.

Black Label Peachy Pepper Salad
Prep Time: 25
Cook Time: 35
Yield: Serves 4
Dressing Ingredients
- 4 peaches
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1 teaspoon sugar
- 1/2 teaspoon ground cumin
- 2 tablespoons Black Label El Yucateco Hot Sauce
- 2 tablespoons cilantro
Salad Ingredients:
- 1 tablespoon butter
- 1 ear of corn
- 1 diced peach
- 2 tablespoons mint
- 2 diced bell peppers
- 1 cup grape tomatoes
- juice of 1 lime
Preheat oven to 400 F.
Half and pit the peaches. In a baking dish, pour the olive oil and place the peaches face down. Roast for 30 minutes. Pass peaches through a food mill.
Transfer to a food processor with all of the other ingredients for the dressing. Process well.

- Preheat oven to 400 F.

- Using a sharp knive, cut the kernels off of the corn cob.
- Heat butter in a skillet. Add corn and saute for about 5 minutes, until the corn starts to become browned.
- In a large bowl, combine corn, peach, mint, bell peppers, tomatoes and juice of 1 lime. Stir to combine.
- Add 2/3 cup of the dressing and mix to combine. Leave for 15 minutes for the flavors to develop.

Serve on its own as a salad or with tortilla chips. You can also use as a salsa topping for tacos.
Full of smoky flavors, the dressing also works as a marinade.
