What does summer mean to you? A summer isn’t complete without attending at least one barbecue. They start on Memorial Day weekend and keep going strong until Labor Day. Warm weather means it’s practically a cardinal sin to have an indoor party. Along with barbecue chicken, spare ribs, burgers, hot dogs, grilled veggies, kebabs and a must at my parties – grilled pineapple comes all the sides.
Green salad, fruit salad, potato salad and macaroni salad and if you are at a Spanish or Caribbean barbecue – rice and beans is a must!
However, this isn’t exactly the healthiest food in the world. How about trying this version instead of the usual macaroni salad. Using whole wheat berries is a fiber rich way to still enjoy this tasty salad.
Serves 4-6
Ingredients:
- 5 cups water
- 1 bouillon cube
- 1 cup whole wheat berries/ whole wheat kernels
- 2 stalks celery, finely chopped
- 4 carrots, grated
- 1 peach, finely chopped
- 3 tablespoons mayonnaise
- 1 tablespoon spicy brown mustard
- 1 tablespoon sweet relish
- 2 teaspoons prepared horseradish
- 1 teaspoon sriracha
- 2 teaspoons paprika
- 2 teaspoons sugar
- 5 stalks mint leaves, finely chopped
Bring water and bouillon cube to a boil. Add wheat berries and boil for 40 minutes. Drain, if necessary. The wheat will absorb most of the liquid.
Add all other ingredients and stir to combine.
Leave to chill for 1 hour before serving.
Whole Wheat berries are a great alternative to rice, with much more added health value. However, it will take a little getting used to the texture if you are used to soft rice or pasta. It has more bite to it and is more chewy.
