Tropical Meatball Kebabs

Prep Time: 25 minutes
Assembly Time: 5 minutes
Serves 4

Ingredients:

  • 1/4 pkg. #FarmRich Italian style meatballs
  • 1/4 pineapple, peeled, cored and diced
  • 1 1/2 teaspoons grated ginger
  • 1 1/2 teaspoons firmly packed brown sugar
  • 1/8 teaspoon cayenne pepper
  • 1/2 red bell pepper, diced
  • 1/2 green bell pepper, diced
  • 2 oz. Colby Monteray Jack cheese, diced
  • 1 tablespoon olive oil
  • salt and black pepper, to taste

Preheat oven to 425 F. Place a piece of parchment paper on a cookie sheet. Place meatballs on the cookie sheet. Bake for 15 minutes.

Meanwhile, combine pineapple, brown sugar, ginger and cayenne pepper in a Ziploc bag. Toss to combine. Leave to marinate.

Toss the bell peppers with the olive oil, salt and pepper.

When the meatballs are finished cooking, slice them in half and toss with the pineapple. Leave for a few minutes.

Now let’s put together our kebabs. On each skewer, first place a red bell pepper, then one 1/2 meatball, then add a piece of green bell pepper, a piece of pineapple, a piece of cheese and lastly, another 1/2 meatball.

Need something quick and easy for your next Superbowl party or labor day barbecue. These are perfect. The spiced pineapple gives it a little kick! You can even skip the cheese and grill them on the barbie!
