Nachos… Mexican or American? Although it was created in Mexico, it really is more of an American snack. There were some wives of US soldiers who had arrived at a restaurant in Mexico after going on a shopping trip. The restaurant had already closed so the maitre d invented a snack for them with what he could find in the kitchen, hence fried tortilla chips with cheese sauce was invented. His name was Ignacio with the nickname of Nacho.
Prior to going to school at the University of New Mexico, I had never before had nachos. I then went to a football game and my friend offered me one. That cheese sauce and me were instant friends and I pretty much had them at any game or movie I went to. Move over popcorn, Nachos was now my only love at the movie theater. However, now I avoid them because of the calorie content of that rich cheese sauce.
I then came back to New York and Nachos were everywhere. Now we also had them at movie theaters, carnivals, concert and sport arenas. We Americans took over the snack and it is a staple of Tex-Mex cuisine. However, it has evolved and now when you go to Mexican restaurants that offer Tex-Mex cuisine, Nachos Supreme is almost always on the menu. We’ve topped it with so many other ingredients it can even be made into a meal of its own. With lean proteins added in my version of Nachos Supreme here, there is less guilt involved in indulging in this snack than in the cheesilicious version!

Nachos Supreme
Prep Time: 5 minutes
Cook Time:20 minutes
Yield: Serves 4
Ingredients:
- 1 tablespoon oil
- 1/2 onion, chopped
- 8 oz. ground turkey
- 1 fat scallion, chopped
- 1 teaspoon ground cumin
- 1/2 teaspoon dried oregano
- 1/4 teaspoon cayenne pepper
- 1/4 teaspoon salt
- 2 tablespoons finely chopped cilantro
- 5 corn tortillas
- 1/2 cup canned black beans, drained and rinsed
- 2 oz. grated pepper jack cheese
Preheat oven to 350 F.
In a skillet, heat oil. Add onion and saute until they start to change color. Add meat. After a few minutes, add scallions and spices. Cook until meat is browned and cooked through. Add cilantro and stir to combine.
Heat a deep skillet with enough oil for deep frying. Cut tortillas into quarters. Place in hot oil and fry until crispy. Drain on paper towels and toss with a little salt.
In an oven save dish, place chips on the bottom. Top with the meat and then the black beans. Sprinkle cheese on top.
Put in oven for 3-5 minutes until cheese melts.
Notes:
Other add ons often include pickled jalapenos and olives.

Instructions
