Today I am introducing you to Tea Time…Gujarati style. During the colonization of India under the British Raj era, the Brits may have brought the concept of tea time to India, but the Indians kept their own foods to celebrate during this meal. Instead of scones and sandwiches, a variety of fried delicacies like samosas, muruku and tikkas are more popular.
The northwestern Indian coastal state of Gujarat is one of the most Vegetarian states of India. The inventive Gujarati’s have come up with such varied and delicious snacks like muthia and handvo that celebrating tea time or any meal there, you won’t even miss the meat.
For today’s tea time meal, I am bringing you one of these delicious fried snacks with a variety of sides that fafda is often eaten with. Fafda is basically the Gujarati version of muruku, albeit with a slight difference. It is often in Indian cuisine that the same foods will have many different names due to the numerous local languages spoken throughout the country.
I complemented my Fafda with Papitey Ki Cheen & Besan Chutney (aka Gujarati Kadhi).
Fafda
Serves 4 -6
Prep Time: 45 minutes
Cook Time: 10 minutes
Ingredients:
- 2 1/4 cups chickpea flour (besan)
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 1/4 teaspoon red chile powder (cayenne pepper)
- 1/2 teaspoon carom seed (ajwain)
- 2 tablespoons oil
In a bowl, combine flour, salt, baking soda, red chile, carom seed and oil. Add just enough warm water for the dough to come together. (I used 1/4 cup + 1 tablespoon). Leave to rest for 1/2 hour.
On a lightly floured, board, roll out dough into a rectangle. Cut into strips.
In a deep skillet, heat enough oil for deep frying.
Add strips of dough and fry until golden brown. Drain on paper towels.
This crispy and crunchy snack is good, but it’s the accompaniments that bring the flavor over the top!
Serve with Papitey Ki Cheen & Besan Chutney.
