Spinach is my favorite green leaf vegetable. I don’t like bitter greens so things like mustard greens, kale and collard greens rarely if ever, make it on to my table. The sweet gentle notes of spinach is so versatile. I include it in everything from omelettes to salads to pasta to stuffed breads. There’s always a bottle of my homemade Spinach Pesto in my refrigerator.
I am looking to collect some more spinach recipes and hope you’ll help me in gathering some more recipes with this versatile vegetable.
