Grated Potato Casserole – Riivinkropsu

Potato CasseroleThis recipe comes from Satakunta, part of the historic Western province. As I have done research on Finland for this week’s post and I have been treated to such gorgeous scenery from this country, Finland has definitely made it onto my bucket list. However, I am definitely going in summer. They are similar to Iceland in that most of the winter is spent in darkness. In the winter, depending where you are in the country, the sun only rises above the horizon from 2-6 hours. Although I am sure they are used to it, I think I would find it depressing to be in darkness in the middle of the day. Much of the country is also continuously covered in snow throughout the winter season. Unless I’m going skiing, I think I’ll plan a summer trip to Finland.

Until then, I’ll have to settle with exploring this cuisine. While this dish was good, it was a little bland for my palate. I think adding some cheese will definitely up the flavor profile, which is what I will do if I make it again.

Riivinkropsu – Grated Potato Casserole

Prep Time: 15 minutes

Cook Time: 1 hour

Yield: Serves 4

Ingredients:

  • 2 eggs
  • 1 cup milk
  • 1 teaspoon salt
  • 1 teaspoon paprika
  • 2 tablespoons finely chopped parsley (or 1 teaspoon dried parsley)
  • 2 tablespoons all purpose flour
  • 2 potatoes, peeled and grated

Preheat oven to 350 F. Spray a casserole dish with non stick spray or brush with melted butter.

In a bowl, whisk eggs and milk. Add salt, paprika, parsley and flour. Mix well.

Add potatoes and using a rubber spatula, fold into batter.

Transfer to casserole dish and bake for 50 minutes – 1 hour, until golden brown.

Notes:

paprika and parsley were not in original recipe. I added for some additional flavor.

Pair it with some spicy sausage and cucumbers for a complete meal. The spicy sausage added the extra oomph to the meal that the casserole needed.

  2. Nice dish Mir. And I would love to visit Finland too and that too only after reading your post. Sounds like a nice place to visit in winter in spite of the less day light time 🙂
