Sweet ‘n Savory Gluten Free Peach Waffles

Peach Rosemary Waffles, Gluten Free, Whole GrainI have been doing a lot of traveling through Southeast Asia this week via it’s cuisine. You’ve already joined me in my SIngapore and Burma style breakfast and I have another one coming from the same region tomorrow. Today I am presenting an American breakfast, but I decided to adapt some of the culinary traditions of Southeast Asia to an American classic – waffles. One of the reasons Southeast Asian food is beloved by so many is the balance of flavors that is achieved by adding a little spice, a little sweet, a little salt, a little tart – all in one plate! The amalgamation of tastes creates an explosion of flavor in the mouth that is indescribable, yet there is no one flavor that hits you in the face. This is what I tried to achieve in these waffles.

I also made them 100% #wholegrain and #glutenfree by using oat flour and quinoa flour. No need to run out and buy those expensive bags of gourmet flours. I created these flours myself by simply taking the whole grain and whizzing it in my coffee/spice grinder until very fine and ground to a powder.

I love waffles. As a child, we never had a waffle maker so the only times we ever ate waffles was when we ate out. About once a month,we would go out for weekend brunch at Bucaneer Diner, which is still there today. I always had waffles. Pancakes and waffles here in America are generally served with the choice of bacon, ham or sausage to go with it. Since I put some chorizo in the waffle itself, I skipped the meat side in this version.

Sweet n Savory Gluten Free Peach Waffles

Prep Time: 10 minutes
Cook Time: 30 minutes
Yield: 8 square waffles

Ingredients:

  • 1 cup quinoa flour
  • 3/4 cup oat flour
  • 2 tablespoons firmly packed brown sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon finely chopped rosemary
  • 1 finely chopped bird’s eye chile
  • 2 eggs
  • 1 1/2 cups buttermilk
  • 1/2 cup oil
  • 3/4 teaspoon freshly grated nutmeg
  • 1/2 teaspoon ground ginger
  • 2 tablespoons finely chopped smoked chorizo
  • 1 large peach, chopped small

In a large bowl, combine flours, sugar, baking powder, baking soda, salt, rosemary and chile. Mix to combine.

In another bowl, combine the eggs, buttermilk and oil. Whisk well until thoroughly combined. Add to dry ingredients. Mix to combine.

Add peach and chorizo. Mix until combined.

Heat your waffle iron. Spray well with non stick spray. Cook according to waffle maker instructions.

Serve with syrup.

With a cup of coffee, enjoy an all American breakfast, albeit with a twist!

Waffle Breakfast -edit

Not as fluffy or with as much texture as a regular waffle, but I think any #glutenfree person who has been missing their waffles won’t be disappointed!

  1. I like your South East Asian twist to the classic American waffle. Love all the spices and fruit that went into this healthy breakfast. Are those peaches from the farm??
