Sweet ‘n Savory Gluten Free Peach Waffles

Servings: 8 waffles

Ingredients

  • •1 cup quinoa flour
  • •3/4 cup oat flour
  • •2 tablespoons firmly packed brown sugar
  • •2 teaspoons baking powder
  • •1/2 teaspoon baking soda
  • •1/4 teaspoon salt
  • •1/2 teaspoon finely chopped rosemary
  • •1 finely chopped bird's eye chile
  • •2 eggs
  • •1 1/2 cups buttermilk
  • •1/2 cup oil
  • •3/4 teaspoon freshly grated nutmeg
  • •1/2 teaspoon ground ginger
  • •2 tablespoons finely chopped smoked chorizo
  • •1 large peach chopped small

Instructions

  • In a large bowl, combine flours, sugar, baking powder, baking soda, salt, rosemary and chile. Mix to combine.
  • In another bowl, combine the eggs, buttermilk and oil. Whisk well until thoroughly combined. Add to dry ingredients. Mix to combine.
  • Add peach and chorizo. Mix until combined.
  • Heat your waffle iron. Spray well with non stick spray. Cook according to waffle maker instructions.
  • Serve with syrup.
