Peel plantains.

Puree plantain and carrot with water in a blender.

Boil the cinnamon and star anise in water.

Add the evaporated milk and the coconut milk.

Add plantain puree and simmer until thickened.

Add brown sugar and vanilla.

Enjoy with freshly grated nutmeg.
