Roasted Garlic Ingredients 1 head garlic 2 tablespoons olive oil Pesto Ingredients 4 cups spinach leaves firmly packed 1/2 cup pistachios 1/4 cup Parmesan or Romano cheese freshly grated 1 teaspoon salt 1/2 teaspoon crushed red pepper 1 cup olive oil
Preheat oven to 400 F.
Peel garlic.
Combine garlic and olive oil in an oven safe dish and transfer to oven.
Roast for 20-25 minutes, until golden brown.
In a blender or food processor, combine garlic, spinach, pistacchios, cheese, salt and pepper.
With the processor running, slowly add the oil a little at a time, until smooth and homogenous.
