Roasted Garlic Ingredients

  • 1 head garlic
  • 2 tablespoons olive oil

Pesto Ingredients

  • 4 cups spinach leaves firmly packed
  • 1/2 cup pistachios
  • 1/4 cup Parmesan or Romano cheese freshly grated
  • 1 teaspoon salt
  • 1/2 teaspoon crushed red pepper
  • 1 cup olive oil


  • Preheat oven to 400 F.
  • Peel garlic.
  • Combine garlic and olive oil in an oven safe dish and transfer to oven.
  • Roast for 20-25 minutes, until golden brown.
  • In a blender or food processor, combine garlic, spinach, pistacchios, cheese, salt and pepper.
  • With the processor running, slowly add the oil a little at a time, until smooth and homogenous.
