Plantain Corn Soup

Plantain Corn Soup is a quick and easy Vegetarian soup, easily adapted to make it Vegan.

  • 2 tablespoon butter
  • 1 onion finely chopped
  • 2 garlic cloves finely chopped
  • 2 ripe yellow plantains peeled and sliced
  • 1 tomato chopped
  • 1 cup canned corn
  • 1 teaspoon dried tarragon
  • 4 cups water
  • 1 bouillon cube
  • 1 green chile finely chopped
  • pinch freshly grated nutmeg freshly grated
  • salt and black pepper to taste


  • Melt the butter in a pot. Add onion and garlic.
  • Saute for a few minutes until onion is softened.
  • Add plantains, tomato and corn.
  • Saute for 5 minutes.
  • Add tarragon, water, bouillon, chili, salt and pepper.
  • Bring to a boil. Reduce to a simmer and cook for 10 minutes, until the plantains are tender.
  • Add nutmeg and stir to combine.
  • Adjust seasoning as needed.
