Plantain Corn Soup
Plantain Corn Soup is a quick and easy Vegetarian soup, easily adapted to make it Vegan.

- 2 tablespoon butter
- 1 onion finely chopped
- 2 garlic cloves finely chopped
- 2 ripe yellow plantains peeled and sliced
- 1 tomato chopped
- 1 cup canned corn
- 1 teaspoon dried tarragon
- 4 cups water
- 1 bouillon cube
- 1 green chile finely chopped
- pinch freshly grated nutmeg freshly grated
- salt and black pepper to taste
Melt the butter in a pot. Add onion and garlic.
Saute for a few minutes until onion is softened.
Add plantains, tomato and corn.
Saute for 5 minutes.
Add tarragon, water, bouillon, chili, salt and pepper.
Bring to a boil. Reduce to a simmer and cook for 10 minutes, until the plantains are tender.
Add nutmeg and stir to combine.
Adjust seasoning as needed.
