Ingredients
1cupwheatberries
2tablespoonsoil
1thinly sliced onion
2finely chopped garlic cloves
1finely chopped Scotch Bonnet pepper/habanero
15.25oz.can kidney beans
2cupscrushed tomatoes
4cupsspinach leaves
sprigs of fresh thyme
1teaspoonground cumin
saltto taste
Instructions
Boil wheatberries in a pot of boiling water until tender, 30-45 minutes.
Drain and set aside
In a large skillet, heat oil.
Add onions and saute until they start to caramelize.
Add garlic and scotch bonnet. Saute for 1 minute.
Add tomatoes, beans, thyme and cumin. Simmer for a few minutes.
Add spinach and cook until they wilt, about 2-3 minutes.
Add cooked wheat berries and salt. Stir to combine and simmer for a few minutes.
