Spray a grill pan with non stick spray. Place the slices of halloumi and cook until golden brown on both sides.
To make the dressing, whisk together the fig jam, vinegar, salt, pepper, sugar and lemon juice. While whisking, slowly drizzle in the olive oil.
Add mint and whisk until thoroughly combined.
Core pear and slice. Cut slices in half.
Toss pear in dressing until well coated.
On a plate, layer halloumi slices.
Add tossed pear on top.
Garnish with the pepitas and almonds.
