Green Bean Salad with Raspberry
This is the perfect utilization of farm fresh produce. You might not think this combination would work…but it totally does!!!

- 8 ounces green beans or any mix of green, yellow and purple beans, trimmed and snapped in half
- 1 orange
- 3/4 cup raspberries
- 2 tablespoons olive oil
- 1/2 teaspoon red wine vinegar
- 1/4 teaspoon smoked paprika
- 1/4 teaspoon salt
- a pinch of black pepper
Bring a pot of water to the boil.
Add green beans and cook for 2-3 minutes.
Drain and run cold water over them immediately.
Grate the zest from 1 orange and squeeze the juice from 1/2 orange.
You should have 2 tablespoons. Combine the zest in a bowl with the green beans and raspberries.
Make the dressing by combining the vinegar, orange juice, paprika, salt, pepper, vinegar and olive oil.
Add dressing to green beans and toss gently to combine.
