Garlic Herb Baked Halloumi

Ingredients
1
stalks oregano
2
stalks rosemary
or any variety of mixed herbs
1
finely chopped garlic clove
3
tablespoons
olive oil

sliced halloumi
Instructions
Preheat oven to 350 F.
Finely chop the leaves of the oregano and rosemary. Chopped herbs should measure 2 teaspoons.
In a small bowl, combine herbs, garlic and olive oil. Stir to combine.
Brush a little of the olive oil mixture on the bottom of a cookie sheet.
Lay out the slices of halloumi on top.
Brush the rest of the olive oil mixture on top of the halloumi slices.
Place in oven and bake for 15 minutes.
Flip over and bake for another 5 minutes.
Serve with roasted potatoes.
Notes
Any combination of herbs can be used like oregano, rosemary, parsley, cilantro and thyme.
