Com Da Ca Chua (Vietnamese Tomato Rice)
Tomato Rice is a Vietnamese Red Rice commonly enjoyed for breakfast. This easy recipe makes use of leftover rice with eggs and tomato paste for a quick and easy breakfast recipe.

Ingredients

tablespoons
oil
3
cups
cooked rice
2
cloves
garlic
finely chopped

tablespoons
tomato paste
1
teaspoon
chicken bouillon powder
1
tablespoon
fish sauce
2
eggs
beaten
a
pinch
sugar
salt
optional
Instructions
In a wok, heat the oil.
Add garlic and fry for 10 seconds.
Add tomato paste and fry for 2 minutes to cook the paste a little bit.
Add eggs and bouillon powder.
Start to scramble them.
As soon as they start to firm up, add rice.
Cook until the rice is evenly coated with the tomato.
Add fish sauce, sugar and salt, if needed.
Notes
Since salt is included in bouillon powder, additional salt may not be necessary.
