potato
grated

large jalapeno
finely chopped

broccoli
finely chopped
1
cup
grated cheese + 4 tablespoons
I used a combo of Gruyere, Cheddar & Pepper Jack

sausage links
use smoked, pre cooked sausages, chopped (I use Applegate brand Fire Roasted Red Pepper Chicken Sausage)

eggs

fresh cilantro
finely chopped

tablespoons
fresh parsley
finely chopped
salt and freshly ground black pepper
to taste
Instructions
Preheat oven to 375 F. Grease a large casserole dish.
Place all the ingredients except the eggs, salt and pepper in a bowl, using 1 cup of the cheese.
In a large bowl, beat the eggs and add a generous amount of salt and pepper. Add all of the other ingredients and mix well.
Transfer to a baking dish and spread in an even layer.
Sprinkle the remaining cheese on top. Place in oven and bake for 50 minutes.
