Broccoli Breakfast Casserole

Ingredients

  • 3 cups potato grated
  • 1 large jalapeno finely chopped
  • 1 cup broccoli finely chopped
  • 1 cup grated cheese + 4 tablespoons I used a combo of Gruyere, Cheddar & Pepper Jack
  • 2 sausage links use smoked, pre cooked sausages, chopped (I use Applegate brand Fire Roasted Red Pepper Chicken Sausage)
  • 7 eggs
  • 2 tablespoons fresh cilantro finely chopped
  • 2 tablespoons fresh parsley finely chopped
  • salt and freshly ground black pepper to taste

Instructions

  • Preheat oven to 375 F.  Grease a  large casserole dish.
  • Peel and grate the potatoes. Using cheesecloth or a clean kitchen towels, squeeze out all of the excess liquid from the potatoes.
  • Place all the ingredients except the eggs, salt and pepper in a bowl, using 1 cup of the cheese.
  • In a large bowl, beat the eggs and add a generous amount of salt and pepper.  Add all of the other ingredients and mix well.
  • Transfer to a baking dish and spread in an even layer. 
  • Sprinkle the remaining cheese on top. Place in oven and bake for 45-50 minutes, until golden and bubbly.
