Bhutte Ka Kees – Savory Corn Pudding

Ingredients

  • 4 corn cobs grated
  • 2 tablespoons ghee
  • 1/2 teaspoon mustard seed
  • 1/2 teaspoon cumin seeds
  • a pinch of asoefetida
  • 2 green chiles finely chopped
  • 1 inch piece of ginger grated
  • 1 cup milk
  • 1/4 teaspoon red chile pepper cayenne pepper
  • 1/4 teaspoon ground turmeric
  • 3/4 teaspoon salt
  • 1/2 teaspoon sugar
  • 2 tablespoons coconut freshly grated (or frozen grated coconut, defrosted)
  • 1 teaspoon lemon juice
  • 3 tablespoons cilantro finely chopped
  • 2 tablespoons dessicated coconut

Instructions

  • Using a box grater, grate the corn into a bowl, reserving all the liquid and the corn.
  • Heat ghee in a large pan.
  • Add mustard seed.
  • As soon as they stop popping, add cumin seed and asoefetida.
  • Cook for about 30 seconds until the cumin seeds start to change color.
  • Add green chilies and ginger.
  • Stir fry for about 2 minutes.
  • Add corn, turmeric, red chili powder and salt.
  • Stir fry for about 2-3 minutes.
  • Add milk and sugar. Bring to a boil. Reduce to a simmer and cook for 10 minutes, stirring frequently.
  • Add lemon juice, cilantro and freshly grated coconut.
  • Stir to combine and cook for another 2 minutes.
  • To serve, garnish with cilantro and dessicated coconut.

Notes

Use fresh or frozen coconut - not  sweetened flaked coconut. If you cannot find fresh or frozen, the best substitute is dessicated coconut.
