Heat oil. Add onions and peppers. After 2 minutes, add the garlic. Saute until the vegetables start to caramelize, about 5 minutes.
Add sausage, oregano, basil and red pepper. Saute on heat until the sausages are browned, about 5 minutes. Add 1/2 cup water and simmer on medium heat for 10 minutes.
Serve with pasta.
Notes
If using smoked sausage, you can skip the step of adding water and cooking an additional 10 minutes.
