Xuxu Bahia Style – Brazilian Chayote

Ingredients

oil
1
chopped onion
2
finely chopped garlic cloves
1/4
cup
dried shrimp
8
malagueta peppers
2
chayote
peeled, cored and diced
2
chopped tomatoes
1/4
cup
roasted peanuts
2
tablespoons
finely chopped cilantro
salt
to taste
Instructions
In a skillet, heat oil.
Add onion, garlic, shrimp and peppers. Saute until onions are translucent.
Add chayote, tomatoes and 1/2 cup water. Cover and simmer for 25 minutes.
Add peanuts, cilantro and salt.
Cook for 2 more minutes.
Notes
Use palm oil for a more traditional version.
