- 1 lb. ivy gourd about 4 cups
- 1 tablespoon oil
- 1 teaspoon mustard seed
- 1 teaspoon hulled black lentils urad dal
- 1 teaspoon yellow split peas chana dal
- 1 sprig curry leaves
- 2 teaspoons jaggery powder
- Salt to taste
Split ivy gourd in half vertically.
In a spice grinder or mini food processor, grind coconut, cumin seeds and chiles to a coarse paste.
In a large skillet or wok, heat oil.
Add mustard seed. Once it stops spluttering, add urad dal, chana dal and curry leaves.
Add ivy gourd, jaggery and salt.
Add 1/3 cup water and cook covered for 10 minutes, on low heat.
Add masala paste and stir to combine until well coated.
