Let’s first make the sauce.
In a small bowl, combine water, oyster sauce, soy sauce, fish sauce and sugar. Whisk together until it is well mixed.
Add white parts of the green onions and garlic.
After 30 seconds, add the shallots and chiles.
Saute for a few minutes until the vegetables soften.
Add chicken and stir fry for about 5 minutes on high heat.
Add the sauce and cook on high for another 5 minutes.
Add the basil leaves and the green parts of the scallions. Stir fry until they wilt.
Serve with steamed Jasmine Rice.
