Thai Basil Chicken

Ingredients

  • 2 tablespoons oil
  • 2 green onions green and white parts seperated
  • 2 cloves garlic finely chopped
  • 2 French shallots thinly sliced
  • 3 birds eye chiles
  • 1 ¼ lbs. Boneless skinless chicken thighs cut into bite sized pieces
  • 1 cup firmly
  • packed Thai Basil leaves

Sauce Ingredients:

  • 1/3 cup water
  • 1 ½ tablespoons oyster sauce
  • 1 ½ tablespoons soy sauce
  • 2 teaspoons fish sauce
  • 1 tablespoon sugar

Instructions

  • Let’s first make the sauce.
  • In a small bowl, combine water, oyster sauce, soy sauce, fish sauce and sugar. Whisk together until it is well mixed.
  • Add white parts of the green onions and garlic.
  • After 30 seconds, add the shallots and chiles.
  • Saute for a few minutes until the vegetables soften.
  • Add chicken and stir fry for about 5 minutes on high heat.
  • Add the sauce and cook on high for another 5 minutes.
  • Add the basil leaves and the green parts of the scallions. Stir fry until they wilt.
  • Serve with steamed Jasmine Rice.
